- Cook peas according to package instructions and drain well.
- Mash with cream cheese, lemon juice, zest and salt, leaving some peas intact.
- Toast bread and spread with the warm pea mixture. Finish with mint and serve immediately.
A little note
Add lemon juice gradually if your cream cheese is already quite tangy.

- Drain cooked peas well before mashing so they do not thin the cream cheese topping.
