Ingredients

Method

  1. Blend oats into a coarse flour, then add banana, eggs, milk, baking powder and cinnamon. Blend to a thick batter and let stand for 3 minutes.
  2. Heat a lightly oiled nonstick skillet over medium-low heat. Pour small pancakes, leaving room to flip.
  3. Cook for 2–3 minutes per side until fully set and the centers reach 71°C/160°F. Add oil sparingly between batches.
A little note

Small pancakes are easier to turn than large ones with this flourless batter.

Cooking tips

  • Let the batter stand briefly so the ground oats absorb liquid before judging its thickness.
  • Make small pancakes and use moderate heat; banana can brown quickly while the egg inside still needs cooking.
